Jamaican Shrimp

Lets see if I can do this. The recipe works the best if the mango is really ripe, so you need to buy it a head of time to ripen. Forty this means you too !! As you can tell Forty and I are good friends. Forty and Gina (his first mate ) are the best around !! Now back to the recipe : 2# of shimp (cooked) 1/4 cup salad oil 3 Tbsp. white wine vingar 2 Tbsp. lime juice 1 jalapeno pepper, seeded and finely chopped 1 Tbsp honey 2 tsp. Jerk seasoning Mix everything together very well but the shrimp. Add shrimp , chill 1 hour ,turning bag occasionally. Add 1 medium mango, pitted, peeled sliced, and halved crosswise. 1 small lime, halved lenghtwise and sliced 1 small red onion, quartered and thinly sliced. Add to rest of ingredients. Serve in a nice bowl or platter. Keep chilled. Makes 10 to 12 appetizer servings .
